S'mores in a Jar

Who wouldn't love an ooey gooey s'mores in a jar?!
Recipe adapted from
Makes 8 jars
8 graham crackers, crushed
1 package of mini marshmallows
For the ganache:
8 oz bittersweet chocolate chips
4 oz semisweet chocolate chips
4 tablespoons unsalted butter, cut into chunks.
1 cup heavy cream
3 tablespoons granulated sugar
1/4 teaspoon salt
For the meringue:
3 egg whites
1/2 teaspoon vanilla extract
1/4 cup sugar
Pinch of salt
1 cup marshmallow creme
2 cups mini marshmallows
Making ganache:
  1. Place chocolate and butter in a medium-sized bowl. In a small saucepan, combine the cream, sugar, and salt and heat over medium, stirring constantly until the sugar is completely dissolved (about 4 minutes).
  2. Pour the hot cream mixture over the chocolate and butter. When chocolate starts to melt, stir gently until smooth. Set aside.
  3. Making meringue:
  4. In an electric mixer, beat the egg whites, vanilla and salt at high speed until foamy. Gradually add the sugar and beat until stiff peaks form, (about 4-5 minutes).
  5. Add the marshmallow creme, a spoonful at a time while continuously beating, all of it has been added. Meringue should be fluffy and well combined.
  1. Evenly divide the graham cracker crumbs, and spoon into the bottoms of each jar.
  2. Add a layer of mini marshmallows
  3. Spoon some of the ganache on top of the marshmallows
  4. Follow with another layer of marshmallow, and another layer of ganache.
  5. Spoon a dollop of the meringue on top and allow the peak to extend an inch or two above the top of the jar.
  6. Using a kitchen torch, or a broiler, brown the tops of the meringue. It takes only a few seconds, so be careful not to burn them.
  7. Refrigerate until ready to serve.
